Most Gujaratis are vegetarian and one will find a wide selection of vegetable dishes made in light vegetable oils. The traditional Gujarati thali offers you a great variety of dishes with a variety of unleavened breads, bean-flour, flitters, rice and buttermilk (Lassi). Many of these vegetable dishes are sweet as Gujaratis have a habit of adding sugar to a lot of their food. A number of places also offer traditional Mughlai Cuisine. Some of the popular dishes of Gujarat include Khaman Dhokla- a salty steamed chickpea flour cake. Sevganthia, a crunchy fried snack made of chickpea flour. Kadhi, a curry made of yogurt, chopped vegetables and fries maize puffs, and Undhayoo, in which broad beans, aubergines, sweet potatoes and potatoes are roasted in an earthenware pot which is buried upside down and had a fire built on top of it. This dish is a winter speciality. Another dish served during winters is the Paunk made from different roasted cereals. Then, there is the Jower- a garlic paste (chutney) and sugar. Even the desserts have a vast variety. Some of them being the Doodhpak made of thick, sweetened milk and nuts; Charis which are rich sweets made of clarified butter, milk and dried fruits. Srikhand is another desert in which nuts, saffron, cardamom and candied fruits are mixed in yogurt. Mango and chiku (sapodilla) milk shakes are quite popular among the Gujaratis, who also love ice creams. Vadilal, the ice-cream producer supplies it throughout India. It has around twenty flavors.
